Can i replace vegetable stock for chicken stock in the cream of mushroom soup?

Yes, you can switch the stocks.


To make veggie stock simply pile in a bunch of vegetables in a pot (coarsely chopped), cover with water and simmer until the vegetables are limp and the broth looks like stock. You can make a rich stock by roasting the veggies first under the broiler of you oven. Get them nice and brown, then make your stock. Strain all the veggies out and use like any other stock. Yes i would put all in the pot. just make sure you drain with a chessecloth and you can replace veggie stock with chk stock

3 med. carrots, chopped


3 stalks celery, chopped


2 med. onions, chopped


2 cloves garlic, minced


1 med. potato, diced


1 bell pepper, diced (optional)


12 c. water


Pepper to taste


Herbs to taste





Combine all ingredients in large soup pot and cover with water. Bring to a boil. Reduce heat, cover and simmer until vegetables are tender (about 1 hour). Remove from heat. Cool and strain. Use liquid as base for vegetable soup or for recipes calling for broth or stock.

I make homemade veggie stock all the time, and I almost always use stems, ends, roots, etc...all that stuff you normally cut off and throw away...I learned it from my ex, who was a chef at a very hoity-toity restaurant. I even throw in onion skins - it gives it a beautiful color!

2 lbs boneless chicken breasts


4 tablespoons oil


1/4 cup butter


1/2 cup Parmesan cheese, grated (substitute your cheese of choice)


3/4 cup heavy cream


salt and pepper, to taste


1 lb fettucine





Heat oil in a 10 inch skillet. Cut chicken breast into strips. Add salt and pepper. Fry on medium heat until cooked through.





Sauce:





Melt butter in saucepan; add cream and cheese. cook over low heat, stirring constantly. Do not boil.





Cook fettucine in 3 quarts boiling water. Mix chicken and Alfredo sauce together. Drain noodles. Put sauce and chicken over noodles.

You can make a basic white sauce with a tablespoon of melted margarine, a tablespoon of white flour and milk (whisk the milk slowly until desired consistency).





When I make gravy for biscuits I use bacon or sausage fat instead of Margarine.





If you want turkey or chicken flavoured gravy, use concentrated broth from a roast and thicken it with cornstarch and milk mixture ( Mix one tablespoon of cornstarch with half a cup of milk). Season with seasoned salt.

I never measure when I cook, but homemade gravy includes a little grease, flour, pepper, and milk.





Try 3 or 4 tbsp of grease, 1/4 cup milk, 3 or 4 tbsp flour, and about 1/2 tsp pepper.





Mix Flour, milk, and pepper in a cup and add to hot grease in a skillet on medium heat, when it starts to solidify, stir or whisk until it is the desired thickness.

    I made this up once when I was trying to use up things in the pantry.





    1 pkg. Knorr chicken broccoli rice mix


    1 can cream of chicken


    Some frozen broccoli, lightly warmed in the microwave


    A handful of shredded sharp cheddar


    1/2 packet dry Stove Top tossed with 3 Tbsp. melted butter





    Make the rice mix as directed. Stir in the soup, broccoli, and cheddar. Put it in a greased souffle dish. Top with the Stove Top. Bake at 375F for about 30 minutes. You can add chopped up chicken too if you want.
    Prepare soup with milk not water. Simmer and stir until thickened. Use as a gravy on top of breaded fried chicken breasts and mashed potatoes. Serve with mixed vegetables.





    Or boil chicken breasts chop into pieces and add to soup with mixed vegetables and maybe some diced boiled potatoes. Serve with some crusty hot french bread.
    Into a bowl:


    1 bag of frozen hash brown


    1/2 onion, chopped


    11/2C shredded cheese any kind you like. Reserve some for top.


    Few dashes of hot sauce, also worchestershire


    1C sour cream

    Mix, put into greased 9'x11' pan. Bake @ 350' 45'-1 hour.
    Just eat it as soup.

    Ingredients:





    1 tablespoon vegetable oil


    1 1/2 pound boneless skinless chicken breasts -- cubed


    3/4 cup diced celery


    1/2 cup all-purpose flour


    1 can chicken broth - (13 3/4 oz size)


    1 cup water


    1/2 pound mushrooms -- thinly sliced


    1 teaspoon onion powder


    1/2 teaspoon thyme leaves


    1/4 teaspoon ground white pepper


    1/4 cup milk








    Directions:





    Heat oil in large saucepan. Add chicken and celery and saut茅 until tender. Sprinkle flour over chicken and celery and stir to mix well. Pour chicken broth and water into saucepan slowly, stirring constantly.





    Add remaining ingredients except milk. Heat to boil, reduce heat, cover, and simmer 30 minutes.





    Stir in milk and simmer just until milk is heated.

    1 medium Spanish onion, chopped


    2 stalks celery (with leaves), chopped


    3 medium carrots, chopped


    1/2 cup plus 1 tablespoon flour


    7 cups chicken broth, homemade or low-sodium canned


    3 sprigs parsley


    3 sprigs fresh thyme


    1 bay leaf


    2 3/4 cups cooked, diced chicken


    1/2 cup heavy cream


    2 1/2 teaspoons dry sherry


    1 tablespoon kosher salt


    Freshly ground black pepper to taste


    2 tablespoons chopped flat-leaf parsley


    Melt the butter in a large soup pot over medium heat. Add the onion, celery, and carrots and cook, covered, stirring occasionally, until soft, about 12 minutes. Add the flour and cook, stirring with a wooden spoon, for 2 minutes more.


    Pour in the broth and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the soup. Lower the heat and simmer for 15 minutes.





    Stir in the chicken and bring to a boil. Remove from the heat.





    Whisk the heavy cream, sherry, and salt into the soup and season with pepper to taste. Remove and discard the herb bundle. Divide among soup bowls, sprinkle the top of each soup with the chopped parsley and serve immediately.

    but you usually find when you try something like this and change it a little thats when you find the tastiest dinners

    Hungarian chicken paprikash is served with dumplings. They are VERY easy to make. Not sure if this is the type you are making or not, but if it is, I can get my recipe for dumplings for you when I get home from work. Let me know...
    i totally prefer it over pasta,(linguini to be exact) it's on of my favorite dishes, my mom likes it over rice( i think though becasue she doesn't want to waste the rice), but i think pasta was how it was originally served and i absolutely love it
    I make chicken paprikash and I put it over noodles . medium egg noodles that is . I love that dish it was given to me by my mom in law from hungary . they are hungarian and I loved them to death . sadly they have both passed now . good luck and god bless.
    Either or...but I prefer big wide egg noodles.....yummy.....toss 'em after draining with a wee bit of butter to prevent sticking....
